My "Orange Glaze" Chicken Wraps

Between my daily dance sessions and working at the studio, I don’t always have hours to spend in the kitchen. But because health and diabetes prevention are so important to me, I have to make sure my meals are lean, protein-packed, and delicious!

Today I’m sharing one of my favorite meals. It’s super easy, super quick, and has a unique flavor that makes healthy eating feel like a treat.

The Secret:

The Overnight Marinate

The key to this recipe is prep. I marinated 1 pound of skinless chicken breast overnight in an Orange Peel Glaze from Trader Joe’s. It gives the chicken a bright, zesty taste that’s a nice change from the usual seasonings!

Instructions:

Prep the Mix: In a medium bowl, toss your marinated chicken with chopped onion, garlic, mushrooms, a little oil, salt, and pepper.
Grill it Up: Set your stove or grill to medium-high heat. Grill the onion and chicken until they are cooked through and have those beautiful, lightly charred marks (usually about 4 minutes per side).
The Tortilla: Once the chicken is ready, set it aside and quickly brown your tortilla on both sides in the pan.
Assemble: Top your warm tortilla with the chicken mixture and a sprinkle of feta cheese.
Wrap and Eat! ###
